Hyderabadi Narm Chicken Biryani (Mild)
The gentle, family-safe Hyderabadi biryani — same kacchi dum technique as the teekha version, but with milder spice, more saffron and kewra, so kids and the spice-averse go in first.

What makes it distinctive
"Narm gosht" means the mild end of the Hyderabadi spectrum. It keeps the same raw-meat dum structure as the teekha version but dials the chili way back and leans on saffron, kewra water and cardamom for perfume. In Hyderabad restaurants the plate order is narm first, teekha second — this is the narm plate.
Ingredients
Chicken marinade
- 1 kg bone-in chicken (thighs + drumsticks)
- 2 cups thick yogurt, whisked
- 1 tsp biryani masala (reduce the chili count in the masala)
- ½ tsp Kashmiri red chili powder (for colour, not heat)
- ½ tsp turmeric
- 1¼ Tbsp ginger-garlic paste
- 1 Tbsp lemon juice
- ½ cup fried onions (birista) + frying oil
- Chopped mint + coriander (divided)
- 2 Tbsp oil or ghee
- Salt to taste
Rice
- 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
- Heavily salted water + whole spices (bay, cardamom, cinnamon, cloves)
- 1 tsp oil
Layering / garnish
- ½ cup warm milk + a generous pinch of saffron (soaked 15 min)
- 1–2 Tbsp ghee
- Remaining fried onions, mint, coriander
- 1 tsp kewra water (screwpine extract) + a few drops rose water
Method
- Marinate the chicken in the yogurt, masala, mild chili, turmeric, ginger-garlic, lemon, half the fried onions + mint/coriander, salt and oil. Rest ≥4 h, ideally overnight.
- Parboil the rice to 70% in heavily salted spiced water; drain immediately. (See Dum Cooking Technique.)
- Layer in a heavy pot: rice → chicken → rice → saffron milk, ghee, fried onions, mint, coriander, kewra + rose water.
- Seal + dum: high 5 min, then low 30–35 min, on a tawa to protect the base.
- Rest sealed 15 min; lift from the bottom, serve with raita.
Pro tips
- The kewra water is what makes a narm biryani smell like it should — don't skip it.
- Keep the chili at half-teekha or less; the depth here comes from cardamom + saffron, not heat.
- A spoonful of grated khoya (reduced milk solids) into the top rice layer adds the slight sweetness Hyderabadi narm is known for.
