What makes it distinctive
This is the aanda biryani that Bengali households actually make most of the time. It drops the mutton and lets the boiled egg and golden-fried potato carry the pot, while saffron, kewra water, ghee and a light whole-spice masala keep it fragrant rather than hot. Cheaper and faster than the meat version, but with the same floral Kolkata character.
Ingredients
Eggs + potato
- 6 eggs, boiled 10 min, peeled
- 2 large potatoes, peeled + halved
- Ghee or oil, for frying
- A pinch of turmeric (for the parboil)
The masala base
- 3 Tbsp oil or ghee
- 2 black cardamom, 2 cinnamon sticks, 2 green cardamom, 6 cloves
- 1 large onion, sliced
- 1 Tbsp ginger paste + 1 Tbsp garlic paste
- 1 tsp turmeric, 1 tsp Kashmiri chili powder, 1 tsp biryani masala
- 1 tsp sugar
- 1 Tbsp kewra water
- 200 g yogurt (optional, for a creamier base)

Rice
- 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
- Heavily salted water + bay, cardamom, cinnamon, cloves, 1 tsp shah jeera
- 1 tsp oil
Layering / garnish
- ½ cup warm milk + saffron (flavored milk)
- 1 Tbsp ghee
- Fried onions (birista), mint, coriander
- A few drops rose water
Method
- Parboil the potatoes in salted water with a pinch of turmeric until just fork-tender; drain. Fry the potatoes and the boiled eggs in ghee until golden (the egg gets light golden spots; keep the egg intact).
- Build the masala. In a deep pot, heat 3 Tbsp oil/ghee with the whole spices. Add the sliced onions and fry until golden. Add the ginger + garlic pastes, cook 1 min; add turmeric, chili, masala, sugar and the yogurt (if using). Cook until the oil floats. Add the kewra water. Gently nestle in the boiled eggs for 2 min, then add the fried potatoes for 3 min.
- Parboil the rice to 70–80% in salted spiced water; drain.
- Layer: the egg + potato masala base at the bottom → ⅓ rice → set the eggs back on top → flavored saffron milk over the eggs → ⅓ rice + a pinch of masala + flavored milk → remaining rice → fried onions + remaining flavored milk + 1 Tbsp ghee + rose.
- Seal + dum: press foil tight over the pot, lid on, low heat 25–30 min. Rest 10 min.
- Serve lifted from the bottom, with raita or a squeeze of lemon.
