Ingredients
Chicken marinade
- 500 g–1 kg chicken (bone-in, cut)
- ¼–½ cup yogurt
- 1 Tbsp ginger-garlic paste
- 1 tsp biryani masala
- 1 tsp red chili powder
- ½ tsp turmeric
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 Tbsp lemon juice
- Chopped coriander + mint
- Salt to taste
One-pot base
- 2–3 Tbsp oil or ghee
- 1 large onion, sliced, caramelised
- 2 Tbsp ginger-garlic paste
- 1 tsp turmeric, 1 tsp red chili powder, 1 tsp coriander powder, 1 tsp garam masala
- 1.5–2 cups (120–160 g) aged basmati, rinsed
- 2–2.5 cups spiced water (bay, cardamom, cinnamon, cloves, salt)
- A little saffron in 2 Tbsp milk
- Fried onions + mint + coriander for garnish
Method
- Marinate the chicken in yogurt, ginger-garlic, masala, chili, turmeric, cumin, garam masala, lemon, coriander + mint and salt. Rest 30 min (overnight best).
- Build the base: in a heavy pot, heat the oil/ghee; caramelise the sliced onion to deep gold. Add the ginger-garlic paste and the ground spices; bloom 30 s. Add the marinated chicken with all its marinade; sear 5 min on high so it browns.
- Add rice + water: gently spread the rinsed rice over the chicken (don't stir). Add the spiced water so it just covers the rice. Add a few whole spices if you want.
- Steam: bring to a boil, then cover tightly and drop to the lowest heat. Cook 20–25 min until the rice is tender and the liquid is absorbed. Do not open the lid while it steams.
- Rest + finish: turn off the heat; rest covered 10 min. Drizzle the saffron milk, add fried onions, mint and coriander; fluff gently.
- Serve with raita.
