What makes it distinctive

This is the 3-layer vegetable biryani many Indian kitchens make for a meat-free celebration: spiced rice on the bottom, a rich gravy of mixed vegetables + paneer + tomato + yogurt in the middle, and rice on top, then sealed for a slow dum. The vegetables are parboiled first so they stay distinct, and the ghee + saffron + fried onions finish make it feel like a proper biryani rather than a plain pulao.

Ingredients

Rice

  • 3 cups (600 g) aged long-grain basmati, rinsed + soaked 30 min
  • Heavily salted water + bay, 4 green cardamom, 2 cloves, 1-inch cinnamon
  • 1 tsp oil

Vegetable gravy

  • 1½ cups mixed vegetables, cubed (carrot, French beans, cauliflower, peas, potato)
  • ¼ cup paneer, cubed
  • 2 Tbsp oil or ghee
  • ½ tsp cumin seeds
  • ¾ cup finely chopped onion
  • 2 tsp ginger–green-chili paste
  • 1 cup roughly chopped tomato
  • ½ tsp turmeric
  • 2 tsp coriander powder
  • 1 tsp chili powder
  • ½ tsp garam masala
  • ¼ cup milk
  • ¼ cup yogurt
  • A pinch of sugar
  • 1 tsp biryani masala
  • Salt to taste

Layering / garnish

  • 1 Tbsp ghee (over the top)
  • ½ cup fried onions (birista)
  • Chopped cashews + raisins (optional)
  • A pinch of saffron in 2 Tbsp warm milk

Method

  1. Parboil the mixed vegetables (except peas) in salted water until just tender; drain. The paneer cubes can be lightly sautéed.
  2. Make the gravy: heat 2 Tbsp oil; add cumin seeds, then the chopped onion and fry to golden. Add the ginger–chili paste, turmeric, coriander powder, chili, garam masala and masala; sauté a few seconds. Add the tomatoes + 2 Tbsp water; cook until pulpy. Add the parboiled vegetables, paneer, salt and milk; cook 2–3 min. Add the sugar + yogurt; mix and cook 1 min.
  3. Parboil the rice to 70–75% in salted spiced water; drain.
  4. Combine rice + yogurt: mix the drained rice with ¼ cup yogurt, saffron milk and the fried onions; divide into two equal portions.
  5. Layer (3 layers): ½ the rice in a handi → spread the vegetable gravy evenly → the other ½ of the rice → drizzle the ghee over the top.
  6. Seal + dum: lid on, placed on a non-stick tawa (griddle), slow flame 25–30 min.
  7. Serve hot — flip onto a plate upside down if you want the layered look; garnish with the remaining fried onions, cashews and raisins.

Pro tips

  • Parboil the veg first so the layers stay separate and the grains don't turn mushy.
  • The saffron + ghee + yogurt-coated top rice is what makes the top layer fragrant and golden.
  • Keep the gravy slightly loose — it perfumes the rice during the dum.

Troubleshooting

  • Mushy riceparboiled too far, or the gravy was too watery.
  • Vegetables too softparboil less; they cook further in the dum.
  • Flat flavourmore salt + saffron; veg biryani needs a touch more seasoning than meat.

FAQ

Is vegetable biryani still "biryani"?
Yes — it uses the same 3-layer, sealed-steam (dum) structure, just with vegetables and paneer instead of meat.
Do I have to parboil the vegetables?
Strongly recommended — it keeps the grains distinct and stops the veg from turning to mush during the long dum.
How long is the dum?
25–30 min on a slow flame, on a tawa/griddle to protect the bottom. Everything is already cooked; the steam just melds it.
